VINIFICATION AND AGING
Vinified in terracotta jars.
Maceration on the skins for 30 days.
Spontaneous fermentation and subsequent malolactic fermentation always inside the terracotta jars.
Total refinement in terracotta for 6 months.
TASTING NOTES
View: deep ruby red with slightly garnet reflections
Nose: notes of cherry and plum in spirit, figs, a light hint of vanilla and caramel, salty sensation of the jar, olfactory complexity (mix of spices)
Taste: wide, full, warm, enveloping
